Jumping from box one, Lil’ Miss Terror (7/1) was able to hold out the early pacesetters to lead going through the first turn.
She then entered another gear, pulling away from her rivals to win by one length in 19.51.
Runaway Black (8/1) held on for second place, with Silver Diablo (4/1) a further three-quarter lengths away in third.
Ollerton was tipped for a bright future after she trained two winners on the day, with My Mum Marie also taking top spot.
The 21-year-old said her supportive family had helped inspire a successful stint in the industry so far.
“My father-in-law taught me the ropes on training, including how to box and how everything works at the track,” she said.
“I have been around greyhounds since I was a baby as my Nan and Pop were breeders and I always went to their place to play with the greyhound puppies.”
Ollerton said she dreams of winning a big race at Sydney’s Wentworth Park, but was simply enjoying the opportunity to be a trainer.
“I just like having fun with the greyhounds, whether they win or lose they are still my babies,” she said.
